Hey Friday! : Sriracha Shrimp Pasta.

Spice Up Your Life. [insert Spice Girls song]

TGIF! I wasn’t sure it would ever come. Its been a busy and stressful week back to work. I am so glad to have two days off. For dinner I made Beef Enchiladas, but I don’t think any photos were taken, so It seems pointless to share the recipe. In the vault I have an awesome spicy & light dinner. Only recently did I discover Sriracha sauce. Not knowing anything about it, how it tasted or even how to pronounce it I wasn’t sure I wanted to cook with it. Thankfully I did. It opened a whole new door for me.

The shrimp alone holds most of the flavor. If your not a seafood person, just choose chicken instead.

**Make sure that the people your cooking for know that the shrimp & Sriracha sauce is spicy and placing more sauce over the meal will make it much much much more spicy.** My father learned that the hard way.

Sriracha Shrimp Pasta

Serves 4

INGREDIENTS
1 lb spaghetti
3 tablespoons olive oil
1 lb shrimp, peeled and deveined, tails removed
3 tablespoons sriracha
juice of 2 limes
1/4 cup cilantro leaves, chopped
kosher salt and freshly ground pepper, to taste

Cook 1 lb spaghetti according to package directions, until al dente. Drain through a colander, reserving about a cup of the pasta water.

In a large skillet, heat 3 tablespoons olive oil over medium heat, and shrimp . Season with just a little bit of salt and pepper (there’s lots of seasoning in the garlic-chili sauce, so be careful not to overdo it!). Cook until the shrimp are pink and start to curl, about 3 minutes, flipping halfway through. When shrimp are cooked, add sriracha and toss to coat the shrimp. Add the cooked spaghetti, 1/4 cup of the reserved pasta water, chopped cilantro (reserving about a tablespoon for garnish), and the juice of 2 limes. Toss until combined.

Transfer to a serving bowl and sprinkle with the remaining cilantro.
