Tasty Tuesday: Enchilada Pasta (One Pot Wonder)

Well, this one pot wonder business is turning into something I search for on Pinterest more and more. I have now made 4 or 5 different one pot meals, all earning 4 stars from the family. I used to think it would be more difficult to put it together, or the ingredients would be hard to find and boy was I wrong!! They are literally so simple I’m sure a child could do it. Maybe even a toddler. 🙂 

 

Anyway, on this sunny tuesday I wanted something easy to make and that could be thrown together fast.  I’m at the point for the next 9 working days I want easy meals, that take little or no work. Not that I’m counting down to my 2 weeks off, 9 days but, working at a school that doesn’t have a “Summer Vacation” isn’t the most fun. Enough of that. More Food! 

 

 

Enchilada Pasta

 

 

Enchilada Pasta:

COOK TIME: 20 mins

TOTAL TIME:  30 mins (depending)

 

Serves: 4-6

INGREDIENTS

•1 (10 ounce) Ro-tel diced tomatoes and green chilis, not drained

•1 (10 ounce) mild red enchilada sauce

•2 cups pasta (I used shells)

•2 cups water

•1 can (15 ounces) black beans, drained and rinsed

•1 cup assorted mini bell peppers (about 7-8 mini red, yellow, or orange bell peppers)*

•1 can (12.5 ounces) pre-cooked chunk chicken breast

•2-3 tbsp. taco seasoning (depending on taste preference)

•3/4 cups cheddar cheese, shredded

•Optional toppings: 1 roma tomato, green onions, extra cheese

INSTRUCTIONS

1.In a large skillet over high heat, combine the Ro-tel tomatoes with green chilis, the red enchilada sauce, the pasta, and the water.

2.While waiting for the mixture to boil, drain and rinse the black beans, wash and julienne the bell peppers (remove stems and seeds), and drain and rinse the chicken breast.

3.Heat to boiling. As soon as it start to boil, lower the temperature to medium and add in the black beans, bell peppers, chicken, and taco seasoning.

4.Reduce heat to low, cover, and let simmer for about 15-20 minutes or until the pasta is tender and cooked through.

5.Add in the cheese, stir, and add in any additional toppings. (I chopped up a tomato and some green onions)

6.Top with extra cheese if desired and enjoy immediately

 

 

I personally didn’t like the beans it the pot, but after trying them, it wasn’t so bad. Plus the picky eaters can do what they do best, pick out what they don’t like.
