Friday Fun Day – Pepperoni Chips

Hello All.    Happy Friday Fun Day. 

 

So glad to be back, up and running, literally running. Spring weather is upon us here in New York, unless its snowing. So in an attempt to get in a little better shape, i’ve been running in the morning. The husband had the great idea, and as much as I hate it, I feel 100% better after. In honor of getting fit. I found a recipe in an old magazine for pepperoni chips. I bought a bag at the store already sliced, but the recipe calls for a stick cut into 1/4 inch pieces. All you need is pepperoni, some cooking spray, a pan, and paper towel…and an oven. Maybe a fan, and a window as well. 🙂

Pepperoni Chips

First set your oven to 400 F. 

Spray your pan.

Place the pepperoni on the sheet, all spread out. Try not to overlap too much. 

Then pop them in the oven for 10 mins. 

Take the pan out, and set onto a trivet of some sort.

** There will be smoke, steam, and stinky hotness.** I suggest opening a window or door or turning on the fan.

Press a paper towel onto the pieces, which have seemed to become smaller by about half, to get some of the fat and juice out.

Then pop them back into the oven for another 3-5 mins.

It did say they will stay in a container for up to 3 days. I put mine in the fridge, and when i opened the container they were still crisp.

But to warn you, they are delicious, and apparently healthy for you, also very smelly the next day. Still good. Just smelly. 

And Spicy.
