Turkey & Wild Rice Soup

Let me start off by saying, that Ricky doesn’t care for soup. Of course, as I typed that 3 came to mind that he does like. Either way, this soup has been moved to the Ricky Likes It List. Cheesy name, but honestly, if he likes it that much, it must be good. (toot,toot)

I couldn’t find a recipe that I liked completely so it’s bits and pieces from different ones.  By no means does one have to cook an actual turkey. I got lucky & thats what my mother was making so I stole some from her.

1 pound shredded, cubed, cut up turkey. ( chicken would be fine i’m sure)

1/2 an onion

2 cups diced veggies. ( celery, carrots. Peas would probably work too.)

2 – 10.5oz. cans of cream of chicken soup ( I know, I know. Get over it.)

4-6 cups of Chicken Broth

1 cup uncooked wild rice ( do not put it in the pot uncooked)

1 cup half and half

It called for different spices, I just used Italian Seasoning.

I know as a fact, that it was more than 1 pound of turkey, but my family likes meat in every bite.

Yes, it’s a lot of canned items, but If i didn’t have the broth , I’d use Bullion cubes, or attempt to make my own broth. Same for the soup. I have a post coming up for Chicken and Rice that uses cream of chicken soup too, and to be realistic, it’s a flavor booster.

Place the turkey, onion, veggies, soups, and broth into the crock pot. Stir.

Cover and cook on low 7-8 hours. It’s worth the wait.

1 hour before (At hour 6) cook the wild rice according to the package. Add it to the soup along with the cup of half & half. Stir and cook for another hour or so.  Serve.

My family LOVED this, it was simple and had a lot of flavor. Ricky enjoyed it the next day, and knowing he didn’t usually eat more than one bowl, you can imagine my shock when not even 5 minutes later the bowl was empty and he was asking for more.

Here is the recipe all together:
