Homemade Cheeze-It’s.

It’s Manic Monday & it was that exactly.

After a day of making favors for my cousins wedding, and my car not starting this morning I decide to make a treat for myself. I am part Italian, and believe me, i LOVE cheese. So I figured, why not make some Cheeze-It’s. I have been wanting to try this for the longest time, and i finally grabbed my kitchen aid and went for it. And boy was that the best idea ever!!!

The recipe I used was from, A Golden Afternoon.

Ingredients:

8oz. Sharp Cheddar Cheese ( Coarsely Shredded)

4 Tablespoons Unsalted Butter. (room temp.)

( I only had salted, so I didn’t use the salt in my mixture, it was still salty but not as salty as actual Cheeze-It’s.)

 1 cup Flour

2 Tablespoons Iced Water

After you gather the ingredients, It’s time to shred the cheese! I’m sure that you can buy the bag where the work is done for you, but where is the fun in that?

Next, Combine the cheese, butter, salt (if using) until mixed well, then add the flour until it’s forming small crumbly balls, (Insert dirty thought if needed), slowly add the water. I ended up using 3 tablespoons until it started to blend.

After the mix is sticking together, form a ball, place it on some plastic wrap, and “smash” it into a disk shape, then put it in the fridge for 1 hour. This was the hardest part for me, I don’t believe I posses any patience. I did the dishes, watched some television, and ended up taking a 25 minute shower just to wait.

One hour later, grab the “dough” from the fridge & preheat the over to 375˚F. Place it on a counter, cutting board, table, which ever you use. Sprinkle some flour onto the surface so it doesn’t stick too much.  Roll the mixture to 1/8″ thick.

Cut into 1-inch squares with a knife or pastry cutter if your feeling fancy.  I had a ravioli stamp, which was a little bigger. the only issue was they had to cook a few minutes longer. ( About 15-18minutes)  The smaller ones, were cooked perfect at 12 minutes.

 Enjoy right out of the oven!
